I only use HTML5 for web design. I lot of people I know are as well.
I am not referring to just the DocType, but also to HTML semantics and good practices.
The same goes with CSS3.

Unfortunately many of our clients still use ancient browsers, that's why we use such a doctype and semantics.
There is no problem to use this on a html5 page of course!

I like to use "Progressive Enhancement" techniques to allocate for older browsers. Is not really that hard. You should give it a go. It will make your life a lot easier down the road, PLUS you get all the benefits of the new cool features on new browsers. Everyone wins.
