Wildcard in SQL?

UD 4 / MS Access database. In building a search parameter what character can I use that will return the record regardless of what is in the field. In other words the field name is "clients" I want to be able to enter "ACME Company" and get those records or enter a wildcard and get have the report include all clients. I have tried "*", %, "%", any, all, and a lot of other things? Any help is appreciated.
